Foodie (an attempt at consistent cookery)

 Navy beans, sautéed zucchini, onion, and garlic, couscous & seasoning, topped with burrata. This is AMAZING. I added some bone broth for extra nutrition. 

Italian chicken sausage with couscous & sautéed peppers and onions. 

This is pretty self-explanatory 😆

 Sautéed zucchini on top of alfredo chickpea pasta. Yum. 

 Stuffed bell peppers. This was incredible!!

Also self-explanatory. 

..... this too. One thing I will say is that I added mushrooms, and that elevates an omelette more than I thought it would. 

Just realized that I did not make this, as it's leftover hibachi 🤣 

This was incredible!! Apples, roasted chickpeas & sweet potato with parmesan on top of arugula with a raspberry vinaigrette. 10/10. Would be even better with rotisserie chicken. 

Another bowl with arugula, roasted chickpeas & sweet potato, only this time with a tahini dressing, avocado, and couscous. I would probably make this with a maple Dijon dressing instead next time. 

Little breakfast action. 

This was REALLY GOOD, and I was so proud of myself, as it was the first time I cooked steak to the perfect consistency!! I was really happy with how tender it turned out. I think it was a delmonico cut?? 


 Always finish up with dessert, obviously! 

The February Doldrums

For some reason, it is always so hard for me to write something to go along with my photos... especially now, when the bulk of the pictures I take are of Naomi. And how much can one say about the same baby?! (A lot, actually 😆) So, here is yet another photo dump of our precious Delight. God is good!♡  
       


  

We got to spend some time with Nomi's favorite Aunt Annie & Owen fam!! ♡






  

Moses and Ineke came and spent a day and a half with us... we had a grand ol' time tromping around the woods, playing Uno, and "doing gymnastics". (Ineke did them- I nearly pulled all muscles at once) And Naomi adored having Ineke there to hold her & love on her for hours on end!
