Navy beans, sautéed zucchini, onion, and garlic, couscous & seasoning, topped with burrata. This is AMAZING. I added some bone broth for extra nutrition.

..... this too. One thing I will say is that I added mushrooms, and that elevates an omelette more than I thought it would.
This was incredible!! Apples, roasted chickpeas & sweet potato with parmesan on top of arugula with a raspberry vinaigrette. 10/10. Would be even better with rotisserie chicken.
Another bowl with arugula, roasted chickpeas & sweet potato, only this time with a tahini dressing, avocado, and couscous. I would probably make this with a maple Dijon dressing instead next time.
This was REALLY GOOD, and I was so proud of myself, as it was the first time I cooked steak to the perfect consistency!! I was really happy with how tender it turned out. I think it was a delmonico cut??













Wow. You are doing a GREAT job on your goals! My word, these all look and sound SO delicious! Good job on the steak- we don't have steak often even though we have them from our butchered cows- simply because I lack the confidence to do them well. That is, obviously, not the way to proceed since practice makes perfect but all this to say... good job on the steak! That is an accomplishment! (And one, I am sure, your husband the carnivore was veeeeeeeeerrrrrrrryyyyyyyyyyyy thankful for! hahaha)
